English Interpretation

Cut tofu thickly, fry in oil, then spread a thick mixture of red miso and sugar and grill once more.

豆腐を厚く切りて、油にて焼き、赤味噌と砂糖を合はせたるもの、厚く塗りて、もう一度焼くべし。

Transliteration

Tōfu wo atsuku kirite, abura nite yaki, aka miso to satō wo awasetatru mono, atsuku nurite, mō ichido yaku beshi.

Notes & Annotations

Bingo (備後) was an old province in what is now eastern Hiroshima. Regional attributions in Edo-period cookbooks often indicate a distinctive local technique or seasoning style.

Ingredients

  • firm tofu 豆腐 1 block (350 g)
    一丁 Sliced thick
  • vegetable oil 1 tablespoon
    For pan-frying
  • red miso 赤味噌 3 tablespoons
    Bold, hearty flavour
  • sugar 砂糖 1 teaspoon
  • mirin 味醂 a splash

Method

Serves 2–3

1. Cut firm tofu into thick slices (about 2 cm).
2. Pan-fry the slices in a little oil until golden on both sides.
3. Make a thick Bingo-style miso: 3 tbsp red (aka) miso, 1 tsp sugar, a splash of mirin — stir until smooth and combined.
4. Spread a generous, thick coating of the miso onto one face of each tofu slice.
5. Return to the pan, miso side up. Cover and cook gently for 2–3 minutes until the miso bubbles and caramelizes slightly.

Bingo Province (eastern Hiroshima) was known for hearty, bold-flavoured cooking. The thick miso coating creates a savoury, almost meat-like crust.
