豆腐を茶碗の中に入れ、上より飯を盛りて、汁をかけるべし。掘り出して食すべし。
Transliteration
Tōfu wo chawan no naka ni iré, kami yori meshi wo mori te, jiru wo kakeru beshi. Hori-dashite shokusu beshi.
Notes & Annotations
Uzumi (埋み) means 'buried.' Uzumi-gohan (buried rice) is a traditional dish from Fukui Prefecture where toppings are concealed beneath plain rice — a custom said to originate from hiding luxurious foods from tax collectors.

dashi stock 出汁 200 mlLight broth

Method
Serves 2–3
1. Place a block or large piece of silken tofu in the bottom of a deep bowl.
2. Cover completely with warm cooked rice, pressing gently.
3. Prepare a light broth: 200 ml dashi, 1 tbsp soy sauce, 1 tbsp mirin.
4. Pour the warm broth over the rice, so that it seeps down to the tofu beneath.
5. At the table, use a spoon to scoop through the rice and unearth the buried tofu.
6. Eat the tofu and rice together with the broth.
