豆腐を静かに盛りて、卵の黄身を細かく擦り落とし、金砂の如く豆腐の上に掛けるべし。黄金色を帯びて美し。
Transliteration
Tōfu wo shizuka ni mori te, tamago no kimi wo komakakunikizu ri-orotos hi, kinsha no gotoku tōfu no ue ni kake ru beshi. Ōgon-iro wo obi te utsukushi.

Method
Serves 2–3
1. Bring water to a boil in a pot, and poach 2 egg yolks separately (just until set, about 1 minute), or lightly salt them and let them set in a warm place for 30 minutes.
2. Gently place a block of chilled silken tofu in a serving bowl.
3. Using the fine side of a daikon grater (or microplane), finely grate the salted or poached yolks over the top of the tofu in an even layer.
4. The crumbled golden yolk should cascade over the tofu like a dusting of gold sand.
5. Serve chilled with a light soy-based dipping sauce.
